Who's Behind This Amazing Coffee?
The Chelchele washing station, nestled in the vibrant village of Chelchele within the Yirgacheffe region, is the cornerstone of this remarkable coffee. Smallholder farmers deliver their ripe cherries here, where the coffee undergoes natural processing. This collective effort, from careful harvesting to precise drying, many varieties and many hands creating something together.
The Process
The Natural process at Chelchele involves a thorough journey from harvesting to drying. Ripe cherries are delivered daily, sorted for quality, and cleaned before being spread on raised drying beds. Here, they are constantly rotated, a process taking 8 - 25 days depending on weather conditions. This method enhances the coffee's natural sweetness and fruity undertones, making each sip a delight.
The Region
Yirgacheffe, renowned for its unique coffee profiles, offers ideal growing conditions with its volcanic soil and moderate climate. The highlands, ranging from 1,600 to 2,400 MASL, provide the perfect environment for shade-grown coffee, contributing to the rich, complex flavours the region is known for.
