Who's Behind This Amazing Coffee?

 

This exceptional coffee is the result of the hard work of 542 smallholder farmers in Aileu, Timor-Leste. These passionate growers, working on farms averaging just 0.5 hectares, are dedicated to producing high-quality cherries. Their commitment, along with centralised processing at a mill in Gleno, transforms their careful handpicking into an excellent natural coffee.

The Timor Hybrid varietal flourishes at the high altitudes of Aileu, between 1,550 and 1,600 meters above sea level. Grown under the shade of casuarina trees, this varietal benefits from the ideal conditions of the region, resulting in beans with a distinctive flavour profile marked by fruit-forward notes and a velvety smoothness.

 

 


The Region

 

Situated in the heart of Aileu, Timor-Leste, this coffee is cultivated on steep, mountainous slopes at elevations between 1,550 and 1,600 meters. The rugged terrain and high altitude create a unique microclimate characterised by significant diurnal temperature variations, warm days and cool nights, that allow the coffee cherries to mature slowly, deepening their flavour and complexity.

The region, which includes areas like Fatubessi, Kirlelo, and Laclo in Aileu Vila, presents both challenges and advantages. While the arid conditions and brief rainy season demand careful, traditional cultivation practices, they also ensure optimal sun exposure and natural airflow. These factors help balance moisture levels and enhance the development of distinct, nuanced flavours.

Additionally, the local soils, though modest in nutrient content, benefit from centuries of traditional farming techniques and the natural mineral makeup of the mountainous landscape. Together, these elements not only define the character of the coffee but also underscore the resilience and expertise of the smallholder farmers who cultivate it.



 


The Process

 

The journey from cherry to coffee is a meticulous one. It begins with the selective handpicking of only the ripest, red cherries by dedicated farmers. Once harvested, these cherries are transported to a centralised mill in Gleno where the natural processing method truly shines.

At the mill, the cherries are carefully spread out on drying beds under the tropical sun. Over a period of 18 to 22 days, they dry slowly, allowing the natural sugars and flavours to infuse the beans. Throughout this period, the cherries are raked frequently to ensure even drying and to prevent any clumping that might lead to uneven fermentation or spoilage. This hands-on approach not only preserves the inherent sweetness of the cherries but also enhances the overall complexity of the final cup.

Careful monitoring throughout the drying process is essential, as it helps prevent issues like over-drying or mould formation. This attention to detail ensures that every batch of coffee meets the high-quality standards for which Timor-Leste is renowned.
