The Science Behind Instant Specialty Coffee

Our Instant Specialty Coffee is processed using a method called lyophilisation (freeze-drying). We start by carefully brewing our Seasonal Blend to a high-concentration extract. This liquid is then rapidly frozen to -40°C. Inside a specialised chamber, the atmospheric pressure is drastically reduced to create a vacuum, causing the frozen water to sublimate, meaning the ice transitions directly into a gas vapour without ever entering a liquid phase. The maximum temperature during this secondary drying phase never exceeds 40°C, ensuring the delicate organic compounds and cellular structure of the coffee remain completely intact.

Freeze-Dried vs. Commercial Spray-Dried Coffee

Most supermarket instant coffee is made by blasting low-grade beans with extreme heat, often over 250°C, which essentially boils away the best flavours. We do things differently to keep your brew tasting epic. We start with top-tier Specialty Coffee and gently freeze-dry it in a cold vacuum, never letting the temperature exceed 40°C. This gentle method turns the ice directly into a gas, leaving behind porous granules that lock in up to 90% of the coffee's natural aromas. The result is a clean, crisp cup that actually tastes like real coffee rather than a burnt commercial powder.

Brewing Ratios and Applications

Because this coffee is processed to be 100% soluble, it acts as a highly versatile base for any drink. Each nitrogen-flushed sachet contains exactly the right dose for a standard cup.

  • Long Black: Mix one sachet with 200ml of hot water (optimal temperature range is 90°C to 96°C).
  • Milk-Based (Flat White / Latte): Dissolve one sachet in 30ml of hot water to create an espresso-style concentrate, then top with 150ml of steamed milk.
  • Cold Brew / Iced Coffee: Dissolve one sachet in 30ml of room temperature water, add ice, and pour over cold water or milk.
