They share a simple philosophy based on respecting the land, sticking to traditional farming methods, and avoiding chemicals that harm the soil. By pooling their resources, they've built a shared cupping lab, professional drying stations, and central warehouses. This means every family can produce higher quality coffee while keeping track of exactly where it comes from.

The driving force behind this community is Don Linarco, better known as “Don Lino.” He’s a leader who really knows his stuff when it comes to farming, but he's always looking for ways to improve. He's introduced better harvesting, fermentation, and drying techniques that have raised the bar for everyone in the area. But it's not just about the coffee for Don Lino. He mentors younger growers and pushes for farming practices that protect the environment. When you drink coffee from Betania, you’re tasting the result of all that hard work, tradition, and genuine care for the community.

Coffee Processing Method:

The clarity and citrus sweetness in this coffee come down to a very careful washing process. After the ripest cherries are picked and sorted, they are depulped and placed in sealed tanks for 32 hours. This controlled, anaerobic fermentation allows the sugars to break down slowly, developing those complex flavours. The beans are then washed completely clean and slowly dried on raised beds for nearly a month. It is a slow, meticulous method that guarantees a crisp, sweet, and incredibly clean cup.
