Coffee Processing Method:

Coffee cherries are pulped then fermented in stream water for 12 hours. Agronomists check the tanks to stop the process at the exact right moment. Next, washing canals separate the coffee into seven distinct quality grades. Finally, they sun-dry on raised beds and are hand-sorted daily.
