Firstly, what’s your go-to coffee?
Go to coffee is a long black most of the time but if I need something a little more heavy a double flatty.
How long has the cafe been in operation?
Blackboard varsity has been going on 9 years and soon to be the magical number 10!
What is the best part about operating a cafe?
I think the best part is the people, creating a community and not just a business, making connections with people and having genuinely amazing relationships with the people that come in.
What are your passions outside of coffee?
My family, 3 kids and another on the way takes up most of my time, growing little humans & shaping the way they are is pretty special. Riding my motorbike and making lots of pizza are my other favourite things to do, I find them therapeutic & allow my mind to be free of everything else!
As a chef what is your favourite dish to make?
I wouldn’t say I have a favourite dish, over the years I think enjoying to make things with what’s left in the fridge is my favourite thing, no pre-planned meal and just going for it! problem though is if it’s amazing it’s never easy to recreate!
If someone were to visit the Gold Coast what are the little hidden gems around your area?
Anywhere in our beautiful hinterland, it’s my favourite thing about living on the coast, 10 minutes inland and you have complete serenity, amazing views, the cleanest air and incredible wildlife!
Lastly, If you could invite one person for a coffee who would it be and why?
Freddie Mercury, he was a god amongst men, I’d probably give him lots of espresso martini’s till he was drunk enough to just sing all night!
