Who’s Behind This Amazing Coffee?
The Enciso Franco family has owned El Triunfo since 2014, with Camilo Enciso at the helm. Camilo is not only the farm's owner but also a regional leader and the general manager of ASOPEP, a cooperative committed to improving the livelihoods of farmers in Planadas. Through his leadership, the region has gained greater visibility in the specialty coffee world and has become a standout in Colombian coffee production.
Back in 2015, thanks to a program led by ASOPEP, El Triunfo planted over 320 trees, including walnut, guamo, and vanilla, adding to the farm’s biodiversity. The farm taps into its own natural water sources and also makes use of the community aqueduct, reflecting its commitment to sustainability. Two dedicated forest conservation zones, each about a hectare in size, further protect the land. Towering over the coffee plants are over 100 carbonero trees (Albizia carbonaria), standing at an impressive 30 meters tall, providing essential shade and contributing to the farm's vibrant ecosystem.
The Process
At El Triunfo, meticulous care is taken throughout the fully washed process to ensure the highest quality beans. The harvesting team selects only perfectly ripe cherries, which are pulped without water and undergo fermentation in containers for 96 - 144 hours. After washing with pure spring water, the beans are dried under carefully controlled conditions. This includes a mix of sunlight exposure and shaded drying racks, where the beans are hand-stirred for even drying.
The Region
Planadas, Tolima, is a region celebrated for its ideal coffee-growing conditions, including high altitudes, rich volcanic soils, and a temperate climate. These factors, combined with the dedication of farmers like Camilo Enciso, make Planadas a standout region for specialty coffee.
Colombia’s diversity in climate and geography allows for nearly year-round harvests, making it a powerhouse in the specialty coffee industry. With a growing focus on sustainability and traceability, Colombian coffee like this continue to set benchmarks for quality and flavour.
This coffee is a testament to the future of Colombian specialty coffee. We hope you enjoy every sip of this remarkable brew!
