Harvested at the height of summer on Santuario’s Playa Bonita farm, Honey processed Sudan Rume cherries soak in cool mountain mist, unlocking rare complexity. The cup blooms with delicate florals, surges with ripe blackberry, melts into velvety chocolate, then flickers with a refreshing mint whisper, finishing long and clean.

Sergio Londoño is a third generation coffee grower continuing his family’s long tradition in coffee. Over the past five years, he’s focused on mastering processing at his father’s farm, Playa Bonita, and in the last two years, he’s begun building his own path as an independent producer.

His work blends the knowledge passed down through generations with his own curiosity and innovation, shaping coffees that reflect both heritage and fresh ideas.

Coffee Processing Method:

The process starts with flotation and hand selection to make sure only perfectly ripe cherries are used. Fermentation begins with a 24-hour whole cherry phase, followed by waterless depulping and a long parchment fermentation that lasts between 160 and 200 hours. It’s a careful, time-intensive approach that brings out a truly distinctive cup.
