Mt Pangrango’s volcanic flank, 1350m up, hosts Natcha’s Sigararutang, S795, and Ateng Super cherries. A thermal shock, then 36‑hour red‑wine carbonic maceration, draws depth. The cup opens with orange and mango, slips into ripe peach, settling on silky chocolate, long and sweet.

Coffee Processing Method:

At the Natcha facility in Aceh, North Sumatra, the team keeps pushing what’s possible in coffee processing. They experiment with fermentation styles inspired by the wine world, like carbonic maceration and wine yeast fermentation, to bring more structure and complexity to the cup.

For Natcha Lot 8, the cherries went through 36 hours of carbonic maceration with red wine yeast, then a thermal shock step to capture and stabilise the flavour.
