Finca Las Flores has been shaped by the Vergara family since 1990. Now run by the third generation, the farm has grown from 2 hectares into a diverse 14.5 hectares project with 1.5 hectares as a nature reserve. They grow unique varieties like Ombligon, combining traditional farming with thoughtful, innovative processing.

The Vergara brothers are third-generation growers who know exactly what it takes to produce world-class coffee. Finca Las Flores started small in 1990 with just two hectares and a handful of trees.

Today, Carlos, Jhoan, and Diego Vergara have grown that vision into something special. They even set aside a portion of the farm as a protected nature reserve. This is high-end coffee grown by people who care about the land as much as the final cup.

Coffee Processing Method:

Every cherry is hand-selected before the work even begins. The coffee spends over 100 hours in various stages of fermentation to build deep complexity.

It begins with 18 hours in permeable polypropylene fibre bags, followed by 36 hours Anaerobic Fermentation in sealed barrels. After pulping, the coffee goes back for another 48 hours of fermentation, concluding with a warm thermal shock wash of 35°C.
