This Tabi micro-lot filter coffee by Luz Mila Gonzales was carefully harvested, floated, and hand-sorted for perfection. The cherries underwent 30 hours of underwater fermentation, then pulped, washed, and dried in controlled conditions. Tabi, a unique hybrid of Timor, Bourbon, and Typica, delivers a standout cup.

Meet the Producer behind this Coffee

Doña Luz Mila is a first-generation coffee farmer from Gaitania, Tolima, where she runs two farms, El Oasis and El Recreo, alongside her husband, Eider. After years of city life, she followed her dream of working the land, learning coffee cultivation with the help of neighbours and eventually buying her first farm through a small bank loan.

It took several harvests before Luz Mila found her rhythm. Over time, she moved toward organic practices and proudly earned certification eight years after starting El Oasis. Today, she produces varieties such as Castillo, Caturra, Colombia, and Typica, and often places among the finalists in local coffee competitions. Beyond the farm, she and her family also run a small shop in town and share their days between work, community, and family life.

About the Coffee Processing Method

After harvest, the cherries were fermented underwater for 30 hours before being pulped. The parchment was then gently washed and dried under temperature controlled conditions until it reached ideal moisture.

This micro-lot is 100% Tabi, a variety developed by Colombia’s National Coffee Federation. It’s a hybrid of Timor Hybrid, Bourbon, and Typica, combining resilience with sweetness and complexity in the cup.
