High on Jardines del Edén, 2050m above Caldas, whole cherries bask under crisp Andean air for a slow natural dry. Harvested Jan-Mar, the cup opens lavender-cool, drifts into molten caramel, ripe plum and red-grape juiciness, leaving a satin trail of fruit that whispers back.

Each month, our roaster selects a standout coffee for filter brewing - one that’s captured their attention for its exceptional quality and unique flavour profile. These coffees embody everything we love about specialty coffee, highlighting the care and craft behind every bean. Meet the Producer behind this Coffee

Brothers Felipe and Carlos Arcila come from a long line of coffee growers. Their father and grandfather farmed coffee in Armenia, Colombia, where Carlos remembers riding through the fields with his grandfather, tasting cherries from different trees along the way.

After years of experience and collaboration with local producers supported by CAFICAUCA, the brothers decided to start a new project, Jardines del Edén, planting both traditional and exotic varieties such as Castillo, Gesha, Sidra, and Pink Bourbon. They also cultivate banana, plantain, and mandarin oranges alongside their coffee.

Founded on the family’s deep roots in Colombian coffee, Jardines del Edén brings innovation to every stage of production.

About the Coffee Processing Method

This lot is a blend of Maragesha, Yellow Sudan Rume, Stripped Bourbon, and Sidra from Jardines del Edén.

Each bean was carefully hand-sorted to create a unique lot that brings together the best qualities of these rare varieties.

The cherries were fermented aerobically for 45 hours at temperatures below 22°C, then dried on raised beds until reaching an 11% moisture content, preserving balance and clarity in the final cup.
