The Process
Post-harvest, cherries undergo a sun-drenched transformation. After hand-sorting, they’re spread across raised beds where the high altitude, cool mountain nights and intense daytime heat create a rhythmic drying cycle. For 20–30 days, Gebanesh and Shifara turn the cherries hourly to prevent over-fermentation, adjusting covers during midday scorchers to slow moisture loss.
