Meet the Producer behind this Coffee

Finca Aurora is located in the Matagalpa region of Nicaragua and operated by Sabio Coffee, a sustainable enterprise founded by the Ferrufino family. Currently managed by Enrique Ferrufino alongside his aunt Tania, the operation is deeply committed to community support.

About the Coffee Processing Method

This lot undergoes a slow natural process. After harvesting, the fresh coffee cherries are left to repose in bags for 36 hours before being moved to raised beds. The cherries are then left to dry on these beds for 25 days. Once the drying phase is complete, the coffee reposes for another 11 weeks before the hulling process begins. To ensure the coffee maintains its high quality throughout storage and transit, both the dry parchment and the final green coffee are securely stored in Ecotact bags.
